    Well unfortuantely my girlfriend got called into work Saturday night, so dinner plans fell through. There are some amazing ideas on here though that I will definitely use in the future! I was almost 100% sure I was gonna try Rushman's experimental Buffalo Chicken Tacos:

    Buffalo Chicken Tacos with Celery and Blue Cheese Slaw

    I've been perfecting this meal idea in my mind for the past few days and I'm making it tonight.

    Slaw:
    I used a bag of the pre-shredded cabbage and carrots and finely diced up about 4 -5 stalks of celery. The dressing is 1/4 cup mayo, 1/4 cup bottled blue cheese dressing, 1 tbsp cider vinegar, 1 tbsp mustard, 1 tsp sugar, salt (I would have used celery salt if I had it) and pepper to taste. Mix the drssing, add to the slaw/celery mix, and let marinate for a few hours so the flavors blend.

    Buff Chix:
    Cut up 3-4 chicken breasts into bite size pieces (about an inch)
    In a saucepan melt a 1/2 stick (4 tbsp) of butter with a 1/2 bottle Texas Pete's hot sauce ( or Frank's, I guess, if your really stuck, Pete's is so much better!) Add a few pinches each of cumin, chili powder, and hot paprika if you have it. Wisk together until butter is melted. Pour half over your cut up chicken, reserve half for later. Let chicken marinate for a few hours.
    Preheat grill, skewer chicken on wood skewers that have been soaked in water, grill on low heat, basting with reserved buff sauce until done, maybe 15-20 minutes, turning and basting often (this is how I make hot wings also, on the grill with the same sauce constantly turning and basting, for about an hour).

    Grab some corn tortillas, put in a few pieces of the chicken, top with slaw.

    I'll let you know later if it was any good.

      OK here's something weird I like to make because I crave olive oil a lot.. tell me what ya think:

      Minute Rice makes these little cups of precooked brown/wild rice (I have a stack of coupons for them)

      heat one of those in the microwave... toss with extra virgin olive oil & hot dry spice blend

      add dollop of Greek yogurt (feta cheese goes better, but more expensive)

      add some chopped olives (some minced garlic or scallions might be nice too)

      A buncha healthy stuff that makes a nice lunch... probably sounds weird but it just tastes really good to me.

        Kalamata olives + Greek yogurt on pita bread is a total win, so I think that Cassie5563 may be onto something.

          Bails' Shredded Chicken Chili
           
          2-3 Boneless breasts of chicken
          1 jar of your favorite salsa
           
          Place chicken in slow cooker, cover with salsa, cook on high 3-4 hours.  When done, shred chicken with forks.  Meat should be extremely tender and moist.  If not tender and shreddable, cook longer.  If not moist, add chicken broth/stock.
           
          2 Tbs olive oil
          1 large onion, chopped
          1 jalapeno pepper, seeded, chopped fine
          2 large carrots, chopped
          2 stalks of celery, chopped
          2-3 cloves of garlic, minced
          salt & pepper
          cumin to taste
          chili powder to taste
          oregano to taste
          your favorite hot sauce to taste
          1 28 oz. can of diced or crushed tomatoes
          1/2 bottle of your favorite beer
          1 can of Ro-Tel tomatoes and chiles
          1 can of red kidney beans, drained & rinsed
          1 can of black beans, drained & rinsed
          1 small package of frozen corn (optional)
           
          Saute vegetables in stock pot until they're soft and translucent.  Add seasonings.  Add tomatoes, beer, Ro-Tel and bring to a simmer.  Add beans, corn and shredded chicken.  Simmer for 1-2 hours, partially covered.
           
          Tastes amazing, and is 100% completely healthy.  Protein from the beans and chicken, fiber from the beans, lotsa veggies - can't go wrong.  Simply awesome on those cold, damp, raw winter nights.
